I don’t earn much as I have a minimum wage job, so I’m concerned about the amount of money a car would cost me to have as my wage can vary wildly at the end of the month depending on how busy my place of work is.

I don't think there is any shame in living with your parents. I myself intend to move back home to my parents temporarily in a few months. Your girlfriend has the right idea but may be a little too harsh. From your post it is clear that you do need to learn some independence and should definitely try a bit harder at seeking that independence. Attempting one time to get an apartment isn't much of an attempt and I can see why your girlfriend may be a little frustrated. Living alone can be hot and it is definitely a learning experience! Be honest with her about how you're feeling and maybe ask her for some advice because then she will feel like you are relying on her while also seeking to do what is necessary for your independence.
