For a whole month your GF had zero contact with him? Then at the rehearsal dinner he, uninvited, sat at your table and chatted you both up? As soon as he sat down and made himself comfortable, you GF should have pulled you aside and said something to you. Her not letting you in on the secret at that point was wrong and I would question her motives.
Is she the type that tries to keep the peace between everyone? That could explain some of her behavior. But, waiting to say anything as long as she did and with other people hoping she goes out with the other guy is just disrespectful to your relationship.
Tbh trust is super important here. Trust and security in your relationship. It may also be good to communicate boundaries, HEALTHY boundaries, before such a trip. Such as what you consider cheating (ie. Don't grind dance with other women. That's one for me I don't like that shit lol) basically if he would find it disrespectful for you to do, he also shouldn't do it and you should trust that he knows that too.
